I confess, I’m not much of a salad eater. For lunch I prefer something more hardy, typically a bacon cheeseburger with a strawberry shake and fries.
However, when I do desire healthier options, I really enjoy salads with a healthy dose of meat as well as some of my favorite fruits.
Here are five of the best summer salads I love.
Shrimp, Arugula and Nectarine Salad
There are times when you are too lazy to go to the grocery store, and all you have available is a few shrimp, some arugula and your last nectarine.
Not wanting to leave the house even though I was ravenously hungry, I decided to throw these ingredients together and toss them in a salad.
The result? Delicious! I thought I was a genius until I find out there are many versions of this salad online. Oh well, here is the recipe:
5 large shrimp
3 cups of arugula
1 nectarine
1 tablespoon of olive oil
poppy seed dressing
salt and pepper
Remove shells from shrimp and season with salt and pepper. Heat a tablespoon of olive oil over medium high heat. Cook shrimp for about 5 minutes
or until pink or tender. Set aside. Rinse the nectarine under cool water and dry with paper towel. Use a sharp knife to cut the nectarine’s center seam,
cutting all the way to the pit. Twist the cut nectarine until there are two halves. Cut the two halves into bite-size chunks. After thoroughly washing, add
arugula to a bowl along with the nectarine chunks and shrimp. Toss to combine. Add a touch of poppy seed dressing for extra flavor.
